Snap Pea & Cabbage Slaw

Last Friday I picked up snap peas and cabbage at our local farmers' market to prepare this simple and quick slaw. From Epicurious with minor adjustments.

Ingredients

SLAW:

1/2 small
head red cabbage, thinly sliced or coarsely chopped
3/4 c
head green cabbage, thinly sliced or coarsely chopped
8 oz
snap peas, trimmed and thinly sliced crosswise
1/4 c
fresh parsley, chopped
1/4 c
fresh mint or fresh basil, chopped (i used half of each)

VINAIGRETTE:

3 Tbsp
extra virgin olive oil
3 Tbsp
lemon juice (lime juice may be an interesting twist)
1 tsp
honey
salt and cracked black pepper, to taste

Step-By-Step

1Whisk the VINAIGRETTE ingredients together in a glass prep bowl.
2In a non-reactive bowl combine the slaw ingredients. Pour the vinaigrette over the slaw and toss. Cover and chill.
