Ingredients

1 bag(s)
(2 cups) uncle ben's brand boil-in-bag rice
1 1/4 c
snow peas
1/2 lb
cooked, peeled, deveined shrimp
1 c
sliced celery
1/2 c
reduced fat mayonnaise
1/2 c
thinly sliced carrots
1/2 c
diced red bell pepper
1 Tbsp
fresh lemon juice
black beans (optional)
carrots (optional)

Step-By-Step

1Cook rice according to package directions. Rinse under cold running water to cook; drain.

2Meanwhile, slice snow peas into 1-inch lengths. In a medium bowl, combine snow peas and remaining ingredients.

3Add cooked rice; mix well. Serve immediately or chill until ready to serve.
