1finely diced jalapeno

2 mdcolored bell peppers

1 smonion diced

2 cantomatoes, canned italian-style and diced

1 canblack beans

1 canwhole corn

1 cquinoa, cooked according to package directions
- DRESSING

1/4 colive oil

4 Tbspcumin ground

1/2lime or lemon juice

1 tspsalt and pepper

How To Make quinoa salad

1drain and rinse all canned vegetables. dice all fresh vegetables to approximately the same size as the canned vegetables. In a large bowl, mix all vegetables together.

2In a small bowl, Combine ingredients for the dressing. mix thoroughly. pour over vegetables and combine dressing with the vegetables.

3Chill Salad for approximately 2-4 hour. serve with chips or flour tortillas
