Nopalitos Salad

My Brother made this for Thanksgiving, he used fresh cactus paddles (abt 5-6). But I use the cactus from the jars, to save alittle time, and a couple of steps. We thought both ways were great.

Ingredients

2 jar(s)
(30oz) of cactus, (nopalitos), drained and rinsed.
1-2 Tbsp
lime juice
2 Tbsp
olive oil
1 Tbsp
water
1/2-1 tsp
cider vinegar
3 Tbsp
sugar
1/2 tsp
oragano
1 can(s)
diced tomatoes, well drained
1 clove
garlic, minced
1 medium
yellow or orange bell peppers, chopped
1/2 small
red onion, sliced thin

Step-By-Step

1Place cactus to colander,remove the pepper and onion from the jars, rinse under cold water, strain well. Set aside
2In a medium bowl, whisk lime juice, oil, water, vinegar, sugar, oregano together.
3Slice the red onion into thin slices, drain the tomatoes well.
Combine the cactus, onion,tomatoes and the dressing together and mix well.
