My Creamy Cucumber Salad

I have been searching for the perfect cucumber salad but never seemed to find one that I loved. So I combined two or three of my favorites and added my own touch.


cucumbers, peeled and sliced
1 tsp
kosher salt
1 Tbsp
white or cider vinegar
1/2 c
duke's mayo (or your favorite brand)
1/4 c
sour cream
1 pkg
equal (small blue packet)
1/4 tsp
dill weed
celery seed
of a small onion, sliced thin
of ground black pepper to taste

Directions Step-By-Step

Mix first 3 ingredients,(cukes, kosher salt, & vinegar) Set aside for 30 minutes. Drain well!
Mix together rest of ingredients and add to cucumber mixture and place in fridge til ready to use.

Thank you for sharing. I made something similiar on Monday and didn't use the salt/vinegar trick on the cukes prior to making. My cukes got soggy. Does this recrisp them after refrigerating them? I also left out the may and added about 2 large garlic cloves. The taste was wonderful. It was kind of like aioli mayo. Thanks for sharing
