Very fresh salad from 100 days of real food.

Always looking for different things to do with quinoa. Rice or couscous could also be substituted for the quinoa.

Adding rotisserie chicken would make it a nice meal instead of side dish.

Ingredients

3 c
cooked quinoa
3/4 c
dried fruit of your choice-raisins, currants, craisins
1/4 c
toasted pine nuts
1/4 c
chopped cilantro
1
red bell pepper

DRESSING

1/4 c
lime juice
1/4 c
olive oil
1 tsp
dijon mustard
2 clove
garlic
1 pinch
salt

Step-By-Step

1Mix everything together.
2Make the dressing.
3Pour dressing over the salad.
