Kidney Bean Salad

- 1 15ounce can dark kidney beans (drained not rinsed)
- 2 hard boiled eggs - diced
- 1/4 cup yellow onion - diced small
- 1/4 cup celery - diced small
- 1 small sweet pickle* cut up small
- 1 tablespoon of sweet pickle juice
- 3 to 4 tablespoons mayonnaise
- 1/2 teaspoon yellow mustard
- salt and pepper to taste
1Add beans, eggs, onion, celery, pickle and juice in medium size bowl. Mix lightly ... add mayonnaise and mustard, salt / pepper. Mix well . Cool for at least an hour before serving .
2* you can use 1 1/2 tbs of sweet hot dog relish in place of a sweet pickle.
