I fell in love with this at a potluck where someone brought it. I searched down the owner and got the recipe. Love the crunch the fritos add.

Ingredients

1 large
green pepper, diced small
1 large
red pepper, diced small
2 c
hellman's mayonaise, chilled
4 can(s)
sweet corn, drained
1 medium
red onion, diced small
1 bag(s)
chili cheese fritos 9 oz
2 c
finely shredded cheddar cheese
1/2 small
jalapeno peppers, seeded. chopped very fine. this is optional to add a little kick.

Directions Step-By-Step

Everything in the recipe should be chilled ahead of time.
Mix everything together gently. Do not add fritos. Chill for 1-2 hours. 5 minutes before serving fold in bag of fritos gently. Serve.
