Pamela's Story

This recipe was given to me by my neice. Not long after she was married she and her husband had the family come for lunch. They had fixed lots of good food, but this seemed to be the favorite of everyone. Now, our whole family makes it thanks to my sweet neice.

This is a great summer dish... perfect for picnics and family reunions. Yum!!

Ingredients

1 can(s)
whole kernal corn (drained)
1 can(s)
whole kernal fiesta corn (drained)
1 c
miracle whip salad dressing
1 c
shredded cheese
1/2 pkg
chili fritos
chopped bell pepper (optional)
chopped onion (optional)

Directions Step-By-Step

Mix all ingredients except Fritos. This may be mixed the night before and refridgerated. Just before serving add Fritos. If they are added too early, they will become soggy.

    This is one of my favorite salads...I put the fritos in a bowl next to the salad so they dont get soggy and if any is leftover it can be eaten later :) Thanks for posting!

    I have a good friend that makes almost the same thing except he uses mayo & sour cream and serves it as a dip. It is so easy and so yummy!!

    I am sure it is delicious this way, but we add a package of Mild Taco seasoning to ours here in Texas and my family want it at every gathering....

    I tried this today and it is a great recipe.....I cut up about 1/2 a bunch of green onions (including the green tops) and it made such a pretty dish. The Chili Fritos give it an extra little "zing"! and EASY!! Good Church gathering dish!
