Cucumbers and Onions
We love to keep a bowl of these in the fridge during the spring. They go great with just about any meal.
1Sprinkle sliced cucumbers with salt. Let stand 30 minutes, then lightly squeeze and drain water from cucumbers.
2After draining water from cucumbers, place cucumbers and sliced onions in a large bowl.
3In a medium saucepan, bring water, vinegar, sugar and celery seed to a boil.
Pour mixture over cucumbers and onion.
Refrigerate until chilled or overnight.
