We love to keep a bowl of these in the fridge during the spring. They go great with just about any meal.

Ingredients

medium sized cucumbers, sliced
1/2
onion, thinly sliced
2 c
white vinegar
1 c
water
1 1/2 c
sugar
1 tsp
celery seed

Directions Step-By-Step

Sprinkle sliced cucumbers with salt. Let stand 30 minutes, then lightly squeeze and drain water from cucumbers.

After draining water from cucumbers, place cucumbers and sliced onions in a large bowl.

In a medium saucepan, bring water, vinegar, sugar and celery seed to a boil.
Pour mixture over cucumbers and onion.
Refrigerate until chilled or overnight.
