Cool & Creamy Cucumber & Pepper Salad

16 ounce container low fat (or fat free) sour cream
low fat mayonnaise
1.4 ounce envelope vegetable soup mix (i use knorr)
cucumber, peeled, seeded and chopped
chopped red bell pepper
chopped yellow bell pepper
chopped orange bell pepper
grape tomatoes, rinsed and drained
In a medium size bowl, combine all of the dressing ingredients. Mix well and set aside.
In a large bowl, combine all of the salad ingredients. Add the prepared dressing and toss gently to combine.
Transfer to a large bowl. Cover and refrigerate at least one hour.
