Ingredients

2 Tbsp
whole-grain mustard
2 Tbsp
cider vinegar
1/4 c
vegetable oil
1/4 c
mayonnaise
1 Tbsp
sugar
1/2 tsp
celery seeds
salt and pepper to taste

stalk celery, diced 1/4 inch
1/2
large red bell pepper, diced 1/4 inch

medium red onion, finely chopped
3 c
defrosted frozen corn
4 oz
monterey jack cheese, cubed small
2 Tbsp
chopped parsley
few drops hot pepper sauce, to taste
optional lettuce leaves for garnish

Step-By-Step

1Combine mustard and vinegar in a large bowl.

2Add oil in a steady stream, whisking continuously until blended.

3Stir in mayonnaise, sugar, celery seeds, salt and pepper.

4Add celery, pepper, onion, corn, cheese and parsley.

5Toss well; add hot sauce, taste to adjust seasoning.

6Line a bowl with lettuce leaves (radicchio makes a colorful red border) for garnish.
