Broccoli Shrimp Salad
This is a recipe I got several years ago. I thought it was one my mother made, but my sister doesn't remember it at all, so I must have got it from someone when I was in college. It is a favorite of mine and I hope you enjoy it.
- 6 c
- broccoli, cut in smallish pieces (you can use both stems and florets)
- 1-2 can(s)
- small to medium shrimp
- 1 can(s)
- water chestnuts, sliced
- sweet onion, chopped
- 1 c
- salt and pepper to taste
1You can use the quantity of broccoli that you would like, this recipe is pretty flexible.
2You can use the broccoli raw, but I prefer to blanch it. To blanch the broccoli bring a pot of salted water to a boil. Place the broccoli in the water making sure all broccoli is under water and leave for only 1 minute. Then drain the water from the broccoli and put in ice water to stop the cooking.
3Put the broccoli in a bowl and add the chopped onion, shrimp that has been rinsed, water chestnuts (rinsed), and mayonnaise. Stir together and add salt and pepper to taste.
