This makes a delicious and refreshing Summer salad---great for a picnic supper on the patio.
Corn bread made with mild green chilies and a pitcher of Margaritas make excellent accompanyments.

Ingredients

1 lb
lean ground beef
1 pkg
taco seasoning mix
1/3 c
water
1 bunch
romaine lettuce head, chopped
4 medium
green onions, sliced
1 medium
red onion, chopped
15 1/2 oz
black beans, drained & rinsed
1 large
tomato, chopped
1 medium
avocado, peeled, pitted & cubed
1 c
cheddar cheese, shredded
1/2 c
black olives, sliced
1/2 c
catalina dressing
1 1/2 c
fritos corn chips

Directions Step-By-Step

Brown ground beef and add taco seasoning mix and 1/3 cup water. Simmer 10 minutes until thickened. Set aside.

In a large salad bowl, combine lettuce, red onion, green onion, black beans, tomato, avocado, black olives and cheese. Mix in ground beef/taco mixture.

Just before serving, add the corn chips and enough Catalina dressing to moisten. Toss well and serve immediately.
