Aunt Rena's Rice Salad

I received great reviews on this salad at my weekly Sunday Open House. My Aunt used to make it a long time ago,we haven't had it in ages.
She never measured the ingredients,I forgot to measure when I made it. I know I'll make it again soon and I will measure,in the meantime, rice is the largest amount,the remaining ingredients to taste. Guessing,I would say 1 tablespoon of mayo to 1/2 teaspoon Dijon.The bacon is optional because I'm not a fan of bacon but my Aunt always added to her salad.

cooked rice,chilled mayo
green peas
chicken,cooked and chopped or small boiled cooked shrimp
boiled eggs,minced
ortega brand green chilies,minced
sliced black olives
mushrooms,raw or canned,minced( i prefer canned)
green bell pepper,minced
green onions,minced
salt & pepper,to taste
bacon,cooked crisp,crumbled. optional


dijon mustard

Directions Step-By-Step

Combine salad ingredients. Mix well. Combine mustard and mayo,mix well. Add just enough dressing to moisten salad ingredients.
