Artichoke rice salad
This is a salad that my Mom made growing up. I had the chance to learn how to make it befor she passed away. She said she got it off a Rice-A-Roni box 30 years ago. Now I make it all the time for my family.
1Follow directions on box to make the Rice-A-Roni. Let cool in fridge for one hour.
2Cut up artichoke hearts in larg chunks and green onions and add to rice
3Add one cup of mayo to the juice left in the jar from the artichoke hearts and shake. Add the mayo mix to the rice and stir.
4Let the salad cool for one more hour in fridge befor surving and enjoy
