Ingredients

	1/2 c virgin olive oil
	1/4 cup balsamic vinegar
	2t fresh lemon juice
	salt, pepper and accent
	5 bunches watercress, stemmed washed and dryed
	2 avocados, seeded peeled and cut into chunks
	onion sliced into strips

Deneece's Notes:
When my husband first made this for me I thought "ooo yummy weeds salad" lol but it soon became a favorite! Easy and tasty who could ask for more!

Directions

whisk together oil, vinegar and lemon juice. Add seasonings.

Break watercress up into pieces and put in bowl. Add avocados and onion.

Now pour the dressing over the salad and toss to cover completely

How do you select your watercress? I've seen it in the stores, but never bought any.

I look for crisp dark green leaves. You want it crisp not soggy or slimy feeling. and actually if you smell it it has a slightly spicy smell to it since it has a peppery taste to it.

I just bought one bunch of organic watercress at Earth Fare Market. It was over $2.50 and it's a small bunch. I guess I'll scale down the salad. I didn't realize watercress would be so expensive.
