Salade Parmesan

This salad has become so popular that it appears on one table or another quite often. It's a great salad to bring to a get together. Source:unknown

pinch tips: How to Core a Head of Lettuce


5 tbsp. freshly grated paresan cheese, divided
1/4 cup olive or salad oil
2 tbsp. fresh lemon juice
1 tsp. dry mustard
1/2 tsp. cracked black pepper
2 cloves garlic, minced
dash salt
10 to 12 cups torn salad greens
croutons, crumbled goat cheese, broken walnuts and/or balsamic vinegar, optional

Directions Step-By-Step

In large salad bowl, mix 3 Tbsp. of the Parmesan cheese,the olive oil, lemon juice, dry mustard, pepper, garlic and salt. Top with salad greens. If desired, add your choice of croutons, goat cheese, walnuts, and balsamic vinegar. Toss well. Sprinkle with remaining Parmesan cheese. Serve at once. Makes 8 to 10 side dish servings.
