Green Goddess Salad

I first had a version of this salad at my friend's house in 1967. Her mom had gotten the recipe from a restaurant that was famous for it. This version includes artichoke hearts.

Ingredients

6 c
lettuce, torn

artichoke hearts
1/2 c
ripe olives
2 oz
anchovie fillets
1 c
grape tomatoes

DRESSING

1 1/2 c
light mayonnaise
1/4 c
chives
2 Tbsp
tarragon vinegar
2 Tbsp
parsley
1 Tbsp
tarragon leaves, crushed (if not using tarragon vinegar)

anchovy fillets, chopped
1
green onion

Step-By-Step

1Combine all salad ingredients in large bowl.

2Mix together dressing ingredients. Pour on salad, serve!
