Ingredients

1 large onion, chopped
4 medium tomatoes, chopped
1 medium head of lettuce, chopped
1 lb lean ground beef
1 can(s) (15 ounces) kidney beans, drained
1/4 tsp salt
1 tsp chili powder, or to taste
1 c french salad dressing
8 oz shredded sharp cheddar cheese
2 c corn chips, slightly crushed
salsa, sour cream, guacamole, ripe olives for garnish if desired

Kathie's Notes:

This is a great quick and easy main dish salad. Its especially good for a summer evening supper on a hot day.

I like to serve this to friends with cold iced tea and a fresh fruit dessert. Everyone seems to like it and you can adjust the spices to be as mild or hot as you like.

I found this recipe in a local church cookbook from about 5 years ago and have made it many times since then.

 

Directions

Toss together onion, tomatoes, and lettuce in a large serving bowl. Set aside.

In a large skillet brown beef and drain grease. Add beans, salt, and chili powder. Simmer for about 10 minutes.

Just before serving mix salad dressing and cheese into greens. Pour beef mixture over the greens. Sprinkle with chips and garnish as desired (use salsa, guacamole, sour cream, and/or ripe olives to garnish).
