Stir together vinegar and sugar in a medium bowl until sugar disolves. Add watermelon, Cucumber and Cilantro toss. Sprinkle with peanuts just before serving
The original recipe calls for UNsalted dry roasted peanuts toasted. I used LIGHTLY salted peanuts and everyone loved it. Also, I have made this with flat leaf parsley insead of cilantro and we like it both ways.
