Tropical Waldorf Salad
• juicy red apples
macadamia nuts, chopped
pineapple tidbits, drained (reserve 4 tbs juice)
juice from 1 lemon
whipped cream cheese
1Chop 2 large unpeeled red apples in small cubes.
2Mix with lemon juice to keep from browning.
3In large bowl mix together apples, macadamia nuts, 4 oz whipped cream cheese, pineapple tidbits, pineapple juice, coconut, and cranberries.
4I like to present the Waldorf Salad in 20-25 decorative spoons but you can also use small bowls and serve 8-10 people as a side dish.
