Taffy Apple Salad

This salad is one of my family's favorites. It's refreshing and easy to make. It keeps well, too.

Ingredients

4 c
apples cubed (about 4 medium)
20 oz
pineapple tidbits (drain & reserve juice for dressing)
2 c
miniature marshmallows
1 1/2 c
cocktail peanuts
1/2 c
brown sugar
1
beaten egg
1 Tbsp
flour
1 1/2 Tbsp
apple cider vinegar
8 oz
whipped topping

Step-By-Step

1Prepare dressing first by combining in saucepan pineapple juice, sugar, beaten egg, flour and vinegar. Heat until boiling, stirring constantly. Let cool and then blend in whipped topping.
2While dressing is cooling, combine apples, pineapple, marshmallows, and cocktail peanuts. Fold in cooled dressing.
3Refrigerate at least four hours before serving. Keeps well.
