Pineapple-Orange Congealed Salad

Ingredients

1 can(s)
(15 1/4 ) can crushed pineapple(undrained)
1 pkg
(6 oz) package orange jello
2 c
buttermilk
1 c
coconut
1 c
chopped pecans
1
(12 oz.) carton whipped cream, thawed. (i use cool whip)
(optional) (a few cherries for decorations on top)

Directions Step-By-Step

Place pineapple in a saucepan. Bring to a boil, stirring constantly. Remove form heat. Add gelatin, stirring until dissolved. Stir in buttermilk, coconut and pecans. Cool.

Fold in topping. Pour into a 13 x 9 x 2 inch dish.

Chill until firm.

Since we don't like the artificial whipped toppings, I used real whipping cream. I whipped one pint of cream and sweetened it with 4 TB of confectioner sugar.
The salad set up just fine and was very good. We liked the crunch from the pecans.
Thank you for this recipe. A great dish to take to picnics and family get-togethers.
