Kathleen's StoryThis is my Grandmother's recipe. I haven't thought about it much over the past few years, but remember always having it in the summer as a when I was growing up!
This "salad" is great for BBQ's, Family Reunions and just because you want some on those warm days!!
crushed pineapple, juice reserved
creamy cottage cheese
mayonnaise or 1/2 cup whipping cream, whipped
1Dissolve Jell-o in 1 cup boiling water. Add reserved juice from crushed pineapple. Chill until slightly thickened.
2Beat until frothy, fold in pineapple, cottage cheese, horse radish. Add mayonnaise or whipping cream (whipped) and chopped walnuts.
3Chill until firm. Double for a large mould.
