Light, fruity, good for a hot summer day! Try subbing other flavors of Jello ... raspberry is very good!

Ingredients

1 pkg
[6-oz] lemon jello
1 c
boiling water
1/2 c
half and half or light cream
1/2 tsp
vanilla
1/2 c
sour cream

Step-By-Step

1Dissolve jello in boiling water. Add half and half and vanilla; blend in sour cream. "Mixture will appear slightly curdled".

2Chill until slightly congealed. Beat w/ electric mixer until mixture is smooth.

3Pour into a 3-cup mold. Chill until firm, about 3 hours.

4Unmold and serve or garnish with fresh fruit, if desired.

Makes about 2-1/2 cups, or 5 servings.
