Lemon-Pineapple Salad

I first found this recipe in one of Paula Deen's cookbooks. It is delicious.

Ingredients

1 c
boiling water
2 pkg
lemon gelatin
1 can(s)
condensed milk
1 c
mayonnaise
1 can(s)
20 oz crushed pineapple, drained reserve juice
1 can(s)
8 oz crushed pineapple, drained reserve juice
1 c
sharp cheddar cheese
1/2 c
chopped pecans

Step-By-Step

1Combine 1 C pineapple juice and 1 C water. Bring to a boil over medium-high heat. Remove from heat and add geletins, stirring until dissolved. Pour into large bowl
2Stir in condensed milk and mayonnaise, whisking until smooth. Stir in pineapple, cheese and pecans. Mix well
3Pour into 9 X 12 casserole, cover and refrigeratr upt o 1 hours or until set.
