Frog-Eye Salad

Bea's Story

Great little salad without frogs! It's a very cool and refreshing dish that my sister introduced to me last year. She usually sends some over whenever she makes it. I don't make it often because my husband doesn't particularly care for it and I can't eat but so much! So there you go.


3/4 c
3/4 tsp
1/2 c
pineapple juice
1 Tbsp
self-rising flour
egg, beaten
1 tsp
lemon juice
bag of davinci (acini di pepe) pasta
2 small
cans mandrain oranges, drained
4 oz
cool whip
1/4 c
fine coconut (optional)

Directions Step-By-Step

In saucepan, combine first 5 ingredients & cook over medium heat until thickened. Remove from heat & add lemon juice; stir then let cool to rm temp.
Cook pasta, using pkg directions, then drain & gently mix with first mixture.
Add remaining ingredients and chill before serving.
FYI: The pasta is the frog eyes.

    I am a collector of frogs; I have a great collection of decorative frogs and live frogs in with my Water Dragon. Naturally, I am intrigued and drawn in by the name of this salad. I will have to try this sometime soon.
