Ingredients

2 c cooked rice ,cooled
1/4 c sugar
1 16 oz can whole berry cranberry sauce
1 20 oz can crushed pineapple or pineapple tidbits, drained
1 15 oz can of mandarine oranges, drained
1 container of cool whip
1 c chopped walnuts

Marina's Notes:

This sweet treat is great on a hot day when you're looking for something refreshing but not too heavy. It's so simple to make and you can doctor it up by adding different fruits to it as well.

Directions

Mix all ingredients together in a large bowl... reserving some of the mandarine oranges and chopped nuts as a garnish.

serve chilled over lettuce leaves or just spoon into dessert bowls and enjoy

*optional* can sub pecans or dry roasted cashews in place of walnuts... or can leave the nuts out entirely if you choose.

I love the mixture of the fruit and the rice... I like that it's sweet but not overly so. it's so refreshing when it's really hot out.

Marina, I got ingredients today but just wondering if you drain pineapple and oranges, I would assume you do but want to make sure. I'm anxious to try it.

OMGoodness, I just re-read the recipe and answered my own question. Also I just saw it used whole berries and I got jellied. I'll get the berries and eat the other because I like it too.

Marina I finally got around to making the salad and we really enjoyed it. I gave part of it to our music director's wife and she tried to figure out what was in it. Was really surprised when I told her cranberry sauce. They enjoyed it too. Thanks, this a keeper for me.
