Connie's Grilled Watermelon Salad

- 1 tablespoon plus 4 teaspoons extra-virgin olive oil
- seedless watermelon wedges (about 2 pounds)
- 4 c
- spring salad mix
- 2 oz
- honey goat cheese
- 8 Tbsp
- white balsamic glaze or honey
2Brush 1 tablespoon olive oil evenly over watermelon slices.
3Season with salt and pepper.
4Place melon on grill; grill 2-3 minutes on each side or until grill marks show.
5Divide salad blend on four serving plates.
6Top salad blend with melon, then goat cheese.
7Whisk remaining teaspoons oil and glaze (or honey) until blended.
8Drizzle glaze (honey) over salads.
