3 oz dry instant butterscotch pudding mix
8 oz cool whip
8 oz crushed pineapple with juice
3 c chopped red delicious apples with peels
1 c spanish peanuts
1 c mini marshmellows

This is a family favorite especially during apple season in Michigan. It truly tastes like a caramel apple. I use this for a side salad with lunch or a bowl of it for potlucks. Another kid pleaser, as well.

In large bowl, mix together by hand, dry pudding, cool whip, and pineapple with juice until well blended. Stir in apples, peanuts and marshmallows until thorougly combined. Refrigerate to store.
The 30 minute prep time includes the time it takes to chop the apples.

Jane, I had lunch with friends this afternoon and someone mentioned this salad and asked if I had the recipe. I only had eaten it once before at a baby shower, but I told her I was sure I'd find the recipe here. And...because I live in MI too it makes it even better that a MI cook posted it. Thanks
