Easy Chicken or Tuna Salad

This was one of the first dishes I learned to prepare MANY years ago when I was just getting interested in cooking. I know that there a many variations of chicken salad but this is the way my Mom did it so that's the way I do it.

Ingredients

1
large can chunk chicken or tuna
2 Tbsp
dill pickle relish
1
small onion, finely diced
1/2 c
celery, finely chopped
1/2 c
bell pepper, finely diced (any color)
1/2 c
black or green olives, chopped
3
hard boiled eggs
3 Tbsp
salad dressing or mayo
2
small roma tomatoes, diced
2 c
shredded lettuce

Step-By-Step

1In medium bowl, combine chicken or tuna, pickle relish, onion, celery, bell pepper, olives,and tomatoes. . Stir gently to combine.

2Peel and roughly chop the hard boiled eggs into the mixture.

3Add the salad dressing and gently fold all ingredients together

4If serving immediately, fold in the lettuce; if not, fold it in just before serving.

5This is great served in a hollowed out tomato, on your favorite bread or wrapped in a lettuce leaf. Use your imagination.
