This recipe is excellent for party sandwiches, lunches or for a elegant appetizer.

chicken breast
1 small
onion, chopped
celery stalks, chopped
2-3 Tbsp
sweet pickle relish
1 box
lemon gelatin
1 can(s)
cream of chicken soup
1 pkg
cream cheese, room temperature
1 c
good quality mayonnaise
salt, pepper & olive oil

Directions Step-By-Step

Preheat oven to 375. Place Chicken Breast on baking sheet and drizzle with Olive Oil. Season with Salt and Pepper. Bake for 30-45 minutes or until done. Let cool.
Pick chicken and place in a food processor with onion and celery. Grind to desired consistency. Place in a large bowl and add Pickle Relish.

Meanwhile, place gelatin, soup, mayonnaise and cream cheese in a medium saucepan. Whisk over medium low heat until mixture is smooth and well combined.

Pour over Chicken Mixture and combine well. Chill for at least 4 hours. Is much better if you let it set overnight covered in the fridge.
