Ingredients

1/4 c
sesame seeds, lightly toasted
12 oz
gluten free rotini pasta
1/2 c
vegetable oil
1/3 c
gluten free soy sauce or tamari
1/3 c
seasoned rice vinegar
1 tsp
sesame oil
1 tsp
chili oil
1/4 c
mirin (sweetened sake)
1/8 tsp
garlic powder
1/8 c
finely chopped onion
3 c
chicken breast, cooked and shredded
3/4 c
finely chopped or shredded carrot

Step-By-Step

1Boil gluten free pasta (I recommend Schar's) in lightly salted water according to manufacturer directions. Drain and rinse with cold water. Transfer to large bowl.
2While pasta is cooking, combine vegetable oil, soy sauce, rice wine vinegar, sesame oil, mirin, chili oil and garlic powder. Shake or whisk until blended.
3Add shredded chicken, chopped onion, chopped carrot and toasted sesame seeds to pasta in bowl. Toss lightly. Pour marinade over and gently combine.
4Chill one hour or more until ready to serve.
