Ingredients
- 10 lbs. ground venison
- 4 lbs. ground pork
- 1/4 C. salt
- 1/2 C. brown sugar
- 2 Tbs. ground sage
- 2 tsp. black pepper
- 2 tsp. red pepper
- 2 Tbs. fresh ground cayenne pepper (optional)
How To Make russ's venison sausage

Step 1Mix together venison and pork. Mix salt, sugar, sage and peppers together and add to venison mixture. Make into patties or put in sausage casing and freeze. For a hot flavored sausage. add cayenne pepper to seasoning mixture.
