Ingredients

10 lbs. ground venison
4 lbs. ground pork
1/4 C. salt
1/2 C. brown sugar
2 Tbs. ground sage
2 tsp. black pepper
2 tsp. red pepper
2 Tbs. fresh ground cayenne pepper (optional)

Directions Step-By-Step

Mix together venison and pork. Mix salt, sugar, sage and peppers together and add to venison mixture. Make into patties or put in sausage casing and freeze. For a hot flavored sausage. add cayenne pepper to seasoning mixture.
