1 cup cold lard (unsalted butter, if you prefer, or half lard and half butter)

3½ cups rhubarb, leaves removed; stalks trimmed, washed and dried thoroughly and cut into 1-inch pieces
1 to 1½ cups granulated sugar
¼ cup cornstarch
