INGREDIENTS
2 cups white rice
3 tablespoons extra virgin olive oil
2 & 1/2 cups yellow potatoes
1 & 1/2 cups onion
1 tablespoon fresh garlic (minced)
1 pound 80/20 ground beef
1/2 pound ground pork
1 tablespoon tomato paste
1/2 pound fresh plum (or San Marzano tomatoes, seeded, corded and diced (alternatively, you could use a 15-ounce can of diced tomatoes with liquid))
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup raisins
1 tablespoon fish sauce
3 tablespoons soy sauce (good quality)
1 teaspoon chili garlic paste
1 cup water
1 cup frozen peas (thawed)
1 each fried egg (each serving)
1 each Tabasco sauce (served at a condiment)
