3 tablespoons unsalted butter
•
1 large onion, halved and thinly sliced
•
1 large green pepper, thinly sliced
•
salt and pepper, to taste
•
1/2 to 2/3 pound thinly sliced deli roast beef
•
Worcestershire sauce, to taste
•
1/2 cup mayonnaise
•
1/4 teaspoon prepared horseradish, or more to taste
•
Tabasco or other hot sauce, to taste
•
2 cups grated provolone cheese or a combination of provolone and mozzarella
•
egg wash: 1 egg beaten with 1 tablespoon milk
