1 heaping cup ripe mashed banana
½ cup creamy or crunchy natural peanut butter (just peanuts + salt)
2 eggs
2 tablespoons pure maple syrup (or honey)
2/3 cup unsweetened almond milk (or milk of choice)
1 teaspoon vanilla extract
2 cups old fashioned rolled oats, gluten free if desired
1 teaspoon baking powder
1 teaspoon cinnamon
¼ teaspoon salt
⅓ cup dark chocolate chips, plus 2 tablespoons for sprinkling on top (dairy free if desired)
Optional: ⅓ cup chopped walnuts
