1 raw egg
1 cup milk
1/2 cup chicken stock or broth
freshly ground black pepper
2 hard cooked eggs, chopped
6 slices bread, torn into strips
1 cup coarsely chopped cooked chicken
2 tbsp. unsalted butter
pinch paprika

Directions Step-By-Step

Preheat oven to 350 and grease a 3 quart baking dish.
In mixing bowl, mix raw egg, milk, stock and salt and pepper to taste; beat well. Stir in chopped eggs. Arrange bread and chicken in baking dish. Pour egg and milk mixture over all, dot top with butter and sprinkle lightly with paprika. Bake about 30 minutes or til all the liquid is absorbed and pudding is lightly browned around edges. Cool slightly before serving. makes 1 1/2 quarts pudding.
