6 ounces (about 6 slices) thick-sliced bacon, cut into ¼-inch dice
About 2 cups diced yellow onion (¼-inch dice)
¾ cup diced celery (¼-inch dice)
1 large carrot, peeled and finely grated (about ¾ cup)
1 tablespoon dried dill
2 teaspoons dried thyme
½ teaspoon freshly ground white pepper
⅓ to ½ cup unbleached all-purpose flour
3 cups bottled clam juice
½ cup dry white wine
2 dried bay leaves
3 cans (6.5 ounces each) chopped clams, with their juices
1 cup half-and-half
3 cups diced cooked potatoes (¼-inch dice; any variety will work)
