Turkey Stroganoff



Make turkey cutlets by slicing the breasts or you can buy turkey cutlets (more expensive)

3 tablespoons oil
2 lbs turkey cutlets
salt and pepper
1 c chicken stock
1/2 c tomato sauce
1 onion,finely chopped
1 c sour cream
1 tablespoon chopped chives or green onions
1 tablespoon mince parsley
1/4 c dry sherry


1In a saucepan,heat the oil until hot. Season cutlets with salt and pepper and add the turkey cutlets to the oil and brown lightly. Lower the heat add the chicken broth,onions and tomato sauce;simmer until sauce thickens(20 mins) stirring occasionally. Stir in the sour cream,chives,parsley and sherry. Heat gently until heated through. Serve over egg noodles.
