Turkey over English Muffins

turkey, cooked and cubed
english muffins, toasted
salt and pepper, to taste
In large skillet, melt butter over low heat.
Saute onion and celery until soft.
Add flour, stirring until you have a lightly browned roux.
Slowly, add milk and cook over medium low to medium heat until mixture thickens.
Add turkey, salt and pepper.
While gravy is coming to a boil put English Muffins in toaster.
Serve turkey mixture over well toasted English Muffins.
