Turkey and Sweet Potato Hash

- leftover cubed turkey
- leftover cubed baked sweet potatoes (skin off)
- diced onion
- fresh sage
- fresh thyme
- poached eggs
- prepared gravy or hollandaise sauce packet
1Saute onions, and sweet potaotes until caramelized.
2Add in diced turkey and herbs to heat through.
I crumble in leftover stuffing,but you can leave it out as well.
3Top hash with poached eggs and Turkey Gravy or Prepered Hollandaise sauce if desired.
