Ingredients For margaret's mushroom turkey burgers

1 lgportobello mushroom cap

1 lgshallot, chopped
-
3 Tbspparsley flakes

3 clovegarlic, minced

1/4 tsplemon zest, grated

1 1/4 lblean ground turkey
-
2 Tbspolive oil, extra virgin

1 Tbspworcestershire sauce, low sodium

salt & pepper, to taste
-
8 slicecheddar cheese
-
4sandwich thins
- GARNISH:
-
dijon mustard
-
mayonnaise, fat-free
-
avocado, sliced
-
onion, sliced thin
How To Make margaret's mushroom turkey burgers

1Use a spoon to scrape gills from portobello cap. Chop into chunks. Add to food processor; add shallot, parsley, garlic & lemon zest, pulse until chopped.

2Transfer the mushroom mixture to a large bowl. Add turkey, olive oil, worcestershire, 1 tsp salt & pepper; gently mix with hands until just combined. Divide into 4 balls, then press into 4" wide, 1" thick patties. Plate. Cover & refrigerate until firm, about 30 minutes.

3Preheat grill to medium. Brush grates with olive oil. Grill, 4 - 5 minutes. Give patties a quarter turn & cook another 4 - 5 minutes. Turn & grill until cooked through, another 6 - 7 minutes. Add 2 slices of cheese each patty during the last 2 - 3 minutes of cooking (cover to melt).

4Spread mustard on top sandwich thin & mayo & onion on bottom. Place burger on bottom & avocado on burger & place top sandwich thin on top.
