Ingredients For margaret's mushroom turkey burgers

  • 1 lg
    portobello mushroom cap
  • 1 lg
    shallot, chopped
  • 3 Tbsp
    parsley flakes
  • 3 clove
    garlic, minced
  • 1/4 tsp
    lemon zest, grated
  • 1 1/4 lb
    lean ground turkey
  • 2 Tbsp
    olive oil, extra virgin
  • 1 Tbsp
    worcestershire sauce, low sodium
  • salt & pepper, to taste
  • 8 slice
    cheddar cheese
  • 4
    sandwich thins
  • GARNISH:
  • dijon mustard
  • mayonnaise, fat-free
  • avocado, sliced
  • onion, sliced thin

How To Make margaret's mushroom turkey burgers

    Use a spoon to scrape gills from portobello cap. Chop into chunks. Add to food processor; add shallot, parsley, garlic & lemon zest, pulse until chopped.

    Transfer the mushroom mixture to a large bowl. Add turkey, olive oil, worcestershire, 1 tsp salt & pepper; gently mix with hands until just combined. Divide into 4 balls, then press into 4" wide, 1" thick patties. Plate. Cover & refrigerate until firm, about 30 minutes.

    Preheat grill to medium. Brush grates with olive oil. Grill, 4 - 5 minutes. Give patties a quarter turn & cook another 4 - 5 minutes. Turn & grill until cooked through, another 6 - 7 minutes. Add 2 slices of cheese each patty during the last 2 - 3 minutes of cooking (cover to melt).

    Spread mustard on top sandwich thin & mayo & onion on bottom. Place burger on bottom & avocado on burger & place top sandwich thin on top.
