Ingredients

1 Tbsp
each oil, garlic minced and ginger grated
1/4 c
chopped green onions
1
jalapeno seeded and chopped
1 lb
shrimp uncooked peeled and deveined
1 large
tomato pureed in food processor
3 Tbsp
sweet chili sauce
juice of 1 lime
1 Tbsp
sugar
2 tsp
cornstarch

Directions Step-By-Step

Heat the oil in a large skillet. Add the garlic, ginger, green onions, and jalapenos and saute 2 minutes. Mix together the pureed tomato, sweet chili sauce, lime juice, sugar and cornstarch. Add to skillet. Cook until thickened a bit. Stir in the shrimp and cook until pink. Garnish with chives if desired
