- pork fillet butterflied,2 cloves garlic,1/2cup parmesan cheese,1 egg,1 onion,2/3cups fresh breadcrumbs,2tbsp basil pesto,1cup cream,i cup chick stock,1/2cup of dijon mustard
1Butterfly pork in a bowl mix breadcrumbs,onion egg,Parmesan & pepper.place on butterflied pork and roll up and seal with cooking string.in frying pan add cream,pesto,chick stock & garlic mix until thickens you can also add a little corn flour.seal meat in frypan than transfer to oven for about 45mins or until cooked depends on size of pork! When cooked slice into medallions and pour sauce over top! Yummy yummy!
