Son of (H)Eat it Up Chili

When I found out that I was going to Las Vegas for the World's Food Championship to cook my chili I was super excited.

I did find out that there would have to be some changes and so I set out to Perfect something that was damn near perfect to begin with...And, so it was born, Son of (H)Eat it Up Chili!

ground beef, 94% lean
1 lb
ground sausage
2 Tbsp
vegetable oil
1 large
white onion, minced
green bell pepper, seeded and chopped
jalapeno peppers, seeded, minced
habanero pepper, fresh, seeded, minced
6 clove
garlic, minced
1 bunch
chives, finely minced
2 can(s)
kidney beans, drained and rinsed (14.5oz)
1 can(s)
diced tomatoes (14.5)
1 can(s)
tomato sauce (8oz)
1 can(s)
tomato paste
14 1/2 oz
beef broth
3/4 c
chili powder
1 Tbsp
cumin (ground)
1 tsp
garlic powder
1/2 tsp
cayenne pepper
1 Tbsp
1 Tbsp
white pepper
1 Tbsp
fresh ground cinnamon
1 tsp
anise seed

Directions Step-By-Step

Cook beef and pork until brown and crumbly and no longer pink. Drain and discard any grease.
In a large pot heat olive oil over medium heat. Stir in onion, bell pepper, habanero, jalapeno, and garlic. Cook for about 5 minutes, until the onion is soft.
Stir meat back in and add chives, beans, tomatoes, tomato paste, tomato sauce, and broth. Add additional broth until desired consistency is reached.
Sprinkle with spices and seasonings.
Bring to a boil over medium heat then reduce to low and simmer for 2 hours. Stirring occasionally.
Remove from heat and allow to rest for 20 minutes.
