According to the story behind this sandwich.... This depression-era sandwich was intended as a dig toward President Herbert Hoover & his failed promises that prosperity was just around the corner. Why does that sound sooo familar? Hmmmm.....

Ingredients For open faced prosperity sandwiches

  • 5 Tbsp
    butter, unsalted
  • 8 oz
    button mushrooms, sliced
  • 1
    shallot, minced
  • 1/2 tsp
    salt
  • 1/4 c
    all purpose flour
  • 2 c
    milk
  • 2 c
    cheddar cheese, shredded
  • 2 tsp
    dijon mustard
  • 2 tsp
    worcestershire sauce, reduced sodium
  • 1/2 tsp
    pepper
  • 4 slice
    rustic white bread
  • 8 oz
    deli style turkey, thinly sliced
  • 8 oz
    deli style ham, thinly sliced
  • 2
    tomatoes, cored, cut into 8 - 1/4" thick slices & patted dry

How To Make open faced prosperity sandwiches

    Melt 1 tbsp butter in large saucepan over medium high heat. Add mushrooms, shallot & salt & cook, stirring occasionally, until browned, 7 minutes. Transfer to bowl & set aside.

    Melt remaining butter in same saucepna over medium heat. Stir in flour, cook, 1 minute. Slowly whisk in milk & bring to simmer. Reduce heat to low & cook, stirring occasionally, until thickened, 6 minutes. Turn off heat, stir in 1/2 C cheese, mustard, worcestershire & pepper; set aside.

    Adjust oven rack 5" from broiler & heat broiler. Line rimmed baking sheet with foil & spray with cooking spray. Arrange bread on baking sheet & broil until toasted, 1 - 2 minutes per side.

    Divide mushroom mixture amoung toasted bread. Arrange 2 oz turkey, 2 oz ham & 2 slices tomato over mushroom mixture on each bread slice. Spoon 1/2 C cheese sauce evenly over each sandwich & sprinkle remaining cheese. Broil until cheddar is browned, 3 - 5 minutes. Cool 5 minutes before serving.
