Mushroom Bacon Pizza

1 large italian bread shell, 10 oz
4 oz. shredded mozzarella cheese
1 3/4 cup mushroom bacon sauté, well drained, recipe follows
1/2 cup sliced plum tomatoes
mushroom bacon sauté:
12 oz. bacon, about 12 slices
1 1/2 lbs. fresh white mushrooms, sliced
1 cup chopped onion
1 small clove garlic, minced
2 tsp. crushed oregano leaves
1 tsp. salt
1/2 tsp. ground black pepper

Directions Step-By-Step

Put bread shell (scooped out round loaf) on pizza pan or baking tray. Sprinkle with cheese. Spoon well drained mushroom bacon sauté over cheese. Top with sliced plum tomatoes. Bake in preheated 450 oven til hot and cheese is melted, about 10 minutes. Makes 4 servings.
Mushroom Bacon sauté:
In large skillet over medium heat, cook bacon til crisp, about 5 minutes. Transfer to a paper towel, crumble and set aside. Pour off all but 4 Tbsp. bacon fat. Add mushrooms, onion, and garlic. Cook, stirring in crumbled bacon, oregano ,salt and pepper. use half the mixture to make one pizza and refrigerate the rest. it can be frozen. Makes 3 1/2 cups.
